  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ cup chicken or vegetable broth
  • ¼ cup fresh lemon juice (about 1 lemon)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • ¼ cup fresh parsley, chopped
  • Grated Parmesan cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil. Use about 1 tablespoon of salt per 4 quarts of water.
  2. Cook the pasta according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.
  3. While the pasta cooks, pat the shrimp dry with paper towels and season lightly with salt and pepper.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Transfer to a plate and set aside.
  5. Reduce the heat to medium and add the butter to the same skillet. When the foaming subsides, add the minced garlic and red pepper flakes (if using). Stir constantly for 30-45 seconds until fragrant and just starting to turn golden.
  6. Pour in the chicken broth and lemon juice, scraping the bottom of the pan with a wooden spoon. Let it simmer for about 1 minute until reduced slightly.
  7. Add the drained pasta directly to the skillet with the sauce. Toss together using tongs, adding reserved pasta water as needed to reach desired consistency.
  8. Return the cooked shrimp to the skillet and toss gently. Add the chopped parsley and toss once more. Taste and adjust seasoning with salt and pepper.
  9. Serve immediately in warm bowls, topped with grated Parmesan cheese and extra parsley if desired.

Notes

Don’t rinse the pasta after draining; the starch helps the sauce stick. Work in batches if needed to avoid overcrowding the shrimp. Taste as you go and adjust seasoning.
