  • 3 pounds sweet potatoes (about 4–5 medium potatoes)
  • 1/4 cup unsalted butter, melted
  • 1/4 cup pure maple syrup
  • 2 tablespoons brown sugar, packed
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecan halves, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sweet potatoes: Peel and cube sweet potatoes into 1-inch chunks. Place in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil, then reduce to a simmer and cook for 15-20 minutes, until fork-tender. Drain well.
  3. Mash the sweet potatoes: Return drained sweet potatoes to the pot or transfer to a large mixing bowl. Add melted butter, maple syrup, brown sugar, beaten eggs, vanilla, cinnamon, nutmeg, and salt. Use a hand mixer on low speed to blend until completely smooth.
  4. Make the streusel topping: In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, cayenne, and salt. Stir with a fork. Add cold butter cubes. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture looks like coarse meal with pea-sized butter pieces.
  5. Assemble the casserole: Pour the sweet potato mixture into a greased 9×13 baking dish and spread evenly. Sprinkle the streusel topping evenly over the surface. Do not press it down.
  6. Bake: Place the dish on the middle rack of the preheated oven. Bake for 30-35 minutes, until the streusel is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly, tent loosely with foil for the remaining time.
  7. Cool slightly before serving: Let the casserole rest for 10-15 minutes after coming out of the oven before serving.

Notes

For best results, toast pecans before using. Keep butter cold for streusel. Let casserole rest before serving. Can be assembled a day ahead and refrigerated; add 10 minutes to baking time if baking from cold.
