A creamy, tangy, and spicy buffalo chicken dip made in a slow cooker. This easy, crowd-pleasing recipe balances heat with a rich cheese base for the perfect game day snack.

Ingredients

Scale
  • 2 cups shredded cooked chicken breast
  • 16 oz cream cheese (2 blocks of 8 oz), softened to room temperature
  • 1/2 cup Frank’s RedOriginal hot sauce
  • 1/2 cup creamy ranch dressing
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp garlic powder
  • 2 stalks green onions, chopped (for garnish)

Instructions

  1. If using raw chicken, poach in water with a bay leaf for 15-20 minutes until cooked through, then drain and shred to yield 2 cups. If using rotisserie chicken, pull meat off bones.
  2. In a large bowl, combine softened cream cheese, ranch dressing, and hot sauce. Mix with a hand mixer or sturdy spoon until smooth and pourable, about 2 minutes.
  3. Pour the cream cheese mixture into a 4-quart slow cooker. Add shredded chicken and garlic powder, stirring gently to coat the chicken evenly.
  4. Sprinkle shredded cheddar cheese over the top without stirring.
  5. Cover and cook on low for 2-3 hours, checking at the 2-hour mark until hot and bubbly.
  6. Once hot, stir everything together thoroughly until cheese is melted. Adjust seasoning or thickness with more ranch or milk if needed.
  7. Garnish with chopped green onions and serve immediately with tortilla chips or celery sticks.

Notes

Ensure cream cheese is softened to room temperature to avoid lumps. Do not rush cooking time; high heat can cause cheese to separate. For parties, keep on ‘warm’ setting once done to prevent hardening. Leftovers can be frozen for up to 3 months or refrigerated for up to 4 days.
