Instructions

  1. Brown the butter: Place 1 cup unsalted butter in a light-colored skillet or saucepan over medium heat. Stir occasionally with a rubber spatula or wooden spoon. After about 5–7 minutes, the butter will foam and turn a golden amber color with brown specks at the bottom. Immediately remove from heat and pour into a heatproof bowl. Let cool for 10–15 minutes until warm but not hot.
  2. Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
  3. Mix dry ingredients: In a medium bowl, whisk together 2 ¼ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.
