  • 24 ounces whole white or cremini mushrooms (about 24–30 medium-sized caps, stems removed)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 cups cooked shredded chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened to room temperature
  • ½ cup buffalo wing sauce (Frank’s RedHot Original recommended)
  • ½ cup shredded sharp cheddar cheese
  • ½ cup crumbled blue cheese (optional)
  • ¼ cup ranch dressing (or blue cheese dressing)
  • 2 green onions, thinly sliced (plus extra for garnish)
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ cup shredded mozzarella cheese
  • 2 tablespoons melted butter
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the upper third of the oven.
  2. Clean the mushrooms by wiping each cap with a damp paper towel. Gently twist off the stems and set aside.
  3. Place the mushroom caps on a prepared baking sheet, cavity side up. Drizzle with olive oil, season with salt and pepper, and toss gently to coat. Arrange in a single layer. Roast for 8 minutes. Remove from the oven and let cool slightly.
  4. While the mushrooms roast, make the filling: In a medium mixing bowl, combine softened cream cheese, shredded chicken, buffalo wing sauce, shredded cheddar, crumbled blue cheese (if using), ranch dressing, sliced green onions, garlic powder, and smoked paprika. Stir until well combined and creamy. Adjust seasoning if needed.
  5. Stuff each mushroom cap generously with the buffalo chicken mixture, mounding it slightly.
  6. Sprinkle shredded mozzarella evenly over the stuffed mushrooms. In a small bowl, mix melted butter with about 1 tablespoon of buffalo sauce. Brush this mixture lightly over the tops of the cheese.
  7. Return the baking sheet to the oven and bake for 15-18 minutes, until the filling is hot and bubbly and the cheese is melted and starting to turn golden.
  8. Let cool on the sheet for about 5 minutes. Transfer to a serving platter, sprinkle with fresh parsley or chives and extra sliced green onions, and serve.

Notes

Don’t skip pre-roasting the mushrooms—it prevents sogginess. Use room temperature cream cheese for a smooth filling. For make-ahead, stuff mushrooms up to 24 hours in advance, add topping just before baking. For air fryer, cook at 375°F for 10-12 minutes. Filling can be made up to 2 days ahead.
