Instructions

  1. Mix the dry ingredients: In a large bowl, whisk together 1 cup all-purpose flour, 1 tablespoon sugar, 2 teaspoons baking powder, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon salt.
  2. Mix the wet ingredients: In a separate bowl, whisk together 3/4 cup milk, 1/2 cup pumpkin puree, 1 large egg, 2 tablespoons melted butter, and 1 teaspoon vanilla extract until smooth.
  3. Combine the mixtures: Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined. A few lumps are fine; do not overmix.
  4. Heat your pan: Place a non-stick skillet or griddle over medium heat. Add a small pat of butter and swirl to coat.
  5. Cook the pancakes: Using a 1/4 cup measuring cup, pour batter onto the hot skillet. Cook for 2-3 minutes until bubbles form and edges are set, then flip and cook for another 1-2 minutes until golden brown.
  6. Keep them warm: Transfer cooked pancakes to a plate and cover loosely with a clean kitchen towel.
  7. Create the faces: Let pancakes cool for about 1 minute. Using a squeeze bottle of chocolate syrup, draw two triangles for eyes and a crooked smile on each pancake.
