  • Black decorating gel (for drawing mouths and extra eyes)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 12-14 paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix; a few lumps are okay.
  5. Slowly pour in hot coffee while stirring gently. Batter will become thin and liquidy—like a smooth, dark chocolate milkshake.
  6. Fill each cupcake liner about ⅔ full using a cookie scoop for even sizes.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Rotate pan halfway through if needed.
