  • 8 oz aged cheddar, sliced into thin wedges
  • 8 oz Brie or Camembert, whole or halved
  • 6 oz Manchego or Gouda, shaved or cubed
  • 4 oz prosciutto, thinly sliced, torn into ribbons
  • 4 oz salami or soppressata, sliced into thin rounds
  • 3 oz chorizo (optional), sliced
  • ½ cup fig jam or fig preserves
  • ¼ cup honey, preferably local and runny
  • ½ loaf crusty baguette, sliced into thin rounds
  • 20 crackers or crostini
  • 1 cup fresh grapes, red or green
  • 1 apple or pear, thinly sliced
  • ½ cup cornichons or pickled onions
  • Fresh rosemary or thyme sprigs for garnish
  • ¼ cup toasted almonds or walnuts
  • Flaky sea salt for garnish

Instructions

  1. Set out your board. Place a large cutting board or platter on the counter, clean and dry.
  2. Place the bowls first. Put small bowls of fig jam, honey, and cornichons on the board in a triangle pattern, leaving room for other ingredients.
  3. Add the cheeses. Place the brie whole or halved in one corner. Arrange cheddar wedges in a fan pattern next to it. Put manchego cubes or shavings in another spot, leaving space between each cheese.
  4. Layer the meats. Tear prosciutto into thin ribbons and loosely pile them in a few spots. Fold salami slices into quarters and stack them in a small cluster. If using chorizo, place it separately.
  5. Fill in with fruits and crunch. Scatter grapes in small clusters around the board. Tuck apple or pear slices between cheeses and meats. Add baguette slices and crackers in a few piles.
  6. Drizzle the honey. Drizzle about 2 tablespoons of honey directly over the brie and a little over the cheddar, letting it pool slightly.
  7. Add the finishing touches. Sprinkle toasted nuts in empty spaces. Tuck fresh rosemary or thyme sprigs under cheese wedges or around bowls. Add a pinch of flaky sea salt over the brie and honey.
  8. Step back and adjust. Fill any empty spots with extra crackers or grapes. Move bowls if needed for balance.
  9. Serve immediately. Place the board in the center of the table with small plates, napkins, and a cheese knife.

Notes

Let cheese come to room temperature for 20-30 minutes before serving for best flavor. The rustic look is intentional—imperfect placement looks inviting. Prep ingredients up to a day in advance and assemble just before serving. Leftover cheese, meat, and fruit should be stored separately; cheese keeps up to 5 days in wax paper, meat 3-4 days in an airtight container.
