  • 1/2 cup Granulated Sugar (for coating)
  • 1 tablespoon Ground Cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a separate medium bowl, whisk melted butter, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Gently fold together with a spatula until just combined; do not overmix.
  5. Divide batter evenly among muffin cups, filling each about 2/3 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool slightly.
  8. Mix coating sugar and cinnamon. While muffins are still warm, roll tops in the mixture or press sugar onto tops.

Ensure pumpkin puree is not too watery; drain if necessary. Use room temperature eggs to prevent butter from solidifying. Do not overmix the batter to ensure tender muffins. Coat muffins while warm for best sugar adhesion.
