Ingredients

Scale
  • 8 oz aged sharp cheddar, sliced or cubed
  • 4 oz soft goat cheese log, at room temperature
  • 6 oz Manchego, shaved into thin slices
  • 8 oz Brie wheel
  • 4 oz prosciutto, thinly sliced
  • 4 oz salami, sliced into thin rounds
  • 4 oz soppressata, sliced
  • 6–8 fresh figs, halved
  • 1/2 cup apple butter
  • 1/4 cup honey
  • 1/2 cup dried apricots
  • 1/2 cup pomegranate seeds
  • 1 cup mixed nuts (roasted almonds, pecans, walnuts)
  • 1/2 cup marinated olives (Castelvetrano or Kalamata), drained
  • 1/2 cup cornichons
  • 3 tablespoons whole-grain mustard
  • 1 box crackers (water crackers, rosemary flatbreads, seeded crisps)
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • Fresh rosemary sprigs for garnish
  • Edible flowers (optional)

Instructions

  1. Prep the Cheeses (5 minutes): Take cheeses out of fridge 30 minutes before serving. Slice aged cheddar into 1/4-inch cubes or thin triangles. Cut Manchego into thin shards using a vegetable peeler. Place Brie wheel whole on board. Put goat cheese log on a small plate or directly on board with a spreader nearby.
  2. Prep the Meats (3 minutes): Lay prosciutto slices flat and roll each into a loose ribbon or fold into a ruffled pile. Arrange salami and soppressata slices in overlapping rows or fan them out.
  3. Prep the Fruits and Sweet Items (5 minutes): Halve fresh figs lengthwise. Spoon apple butter into a small bowl. Drizzle some honey over goat cheese if desired. Pour remaining honey into another small bowl. Sprinkle pomegranate seeds into a small pile or scatter around board.
  4. Prep the Savory Accents (2 minutes): Drain olives and cornichons. If toasting nuts, spread on baking sheet and toast at 350°F for 5-7 minutes until fragrant; let cool. Spoon whole-grain mustard into a small bowl.
  5. Arrange the Board (10 minutes): Place small bowls (apple butter, honey, olives, mustard, cornichons) around board. Add cheeses in different areas: Brie in one corner, cheddar cubes in another, Manchego shards near center, goat cheese log with honey drizzle in an easy-to-reach spot. Add meats: prosciutto near Brie, salami near cheddar, soppressata near Manchego. Fill gaps with fruits (figs near goat cheese, pomegranate seeds scattered). Add nuts in empty spaces. Arrange crackers and baguette slic…
  6. Final Touches (2 minutes): Step back and fill any obvious gaps with extra nuts, crackers, or pomegranate seeds. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerating, take out 20 minutes before serving.

Notes

For best flavor, let cheeses and meats come to room temperature before serving. Leave about 20% of the board empty to avoid overcrowding. Layer ingredients: bowls first, then cheeses, meats, fruits, and finally crackers and nuts. If prepping ahead, add crackers and nuts just before serving to keep them crunchy. For a vegan version, use vegan cheeses, maple syrup instead of honey, and plant-based meats. For a nut-free board, replace mixed nuts with roasted chickpeas or pumpkin seeds.
