These Frankenstein Guacamole Deviled Eggs are the perfect Halloween party food because they’re equal parts delicious and adorable. The creamy guacamole filling paired with the tender egg white is next-level comfort food, and the little olive ‘bolts’ on the sides make them instantly recognizable as Frankenstein.

  • 6 large eggs (room temperature)
  • Water (enough to cover eggs by an inch)
  • 1 tablespoon white vinegar
  • Ice (for ice bath)
  • 2 ripe avocados (Haas recommended)
  • 2 tablespoons lime juice (fresh squeezed preferred)
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 12 black olives (sliced into thin rounds)
  • 1 tablespoon sour cream or Greek yogurt (optional)
  • Paprika or smoked paprika (for garnish)

Instructions

  1. Hard-boil the eggs: Place eggs in a single layer in a saucepan. Cover with cold water by about an inch. Add white vinegar. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs sit, fill a bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, roll between palms to loosen, and peel starting from the wider end. Rinse briefly under cold water.
  4. Slice and scoop: Slice each egg in half lengthwise. Pop out yolks into a medium bowl. Arrange egg white halves on serving platter, cut side up.
  5. Make the guacamole filling: To the bowl with yolks, add avocados, lime juice, diced onion, minced jalapeño, cilantro, salt, pepper, and garlic powder. Mash together with a fork until smooth but slightly chunky. Adjust seasoning to taste.
  6. Fill the eggs: Spoon guacamole mixture into a piping bag or zip-top bag (with corner snipped). Pipe a generous swirl into each egg white half.
  7. Add Frankenstein details: Place two olive slices on sides of each egg for ‘bolts’. Use a toothpick to dab tiny dots of sour cream or Greek yogurt for eyes. Add a sour cream line across the top for ‘stitches’. Sprinkle paprika on top.
  8. Chill before serving: Refrigerate finished eggs for at least 15 minutes before serving.

Notes

For perfectly green guacamole, add lime juice first and mix immediately to slow oxidation. Press plastic wrap directly onto surface if not using right away. If guacamole is too loose, add an extra hard-boiled egg yolk to thicken. If too thick, add more lime juice. Double-bag the filling to prevent piping bag explosions. Use older eggs for easier peeling. Can be made dairy-free by omitting sour cream or using vegan cream cheese.
