  • 8 oz (225g) wide egg noodles
  • 1 medium yellow onion, diced (about 1 cup)
  • 8 oz (225g) cremini or white button mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups (360ml) low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • ¾ cup (180ml) full-fat sour cream, at room temperature
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Fill a large pot with water, add about 1 tablespoon salt, and bring to a rolling boil over high heat.
  2. While water heats, place a large skillet or Dutch oven over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it apart, until browned and no longer pink. Drain excess fat if needed, leaving about 2 tablespoons in the pan.
  3. Reduce heat to medium. Add diced onion and sliced mushrooms to the pan. Cook for 4-5 minutes, stirring occasionally, until onions are translucent and mushrooms have released their liquid and started to brown.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle flour over the beef mixture and stir constantly for 1 minute. The mixture will look pasty and clumpy.
  6. Slowly pour in beef broth while stirring continuously. Add Worcestershire sauce and Dijon mustard. Bring to a gentle simmer and cook for 3-4 minutes, stirring occasionally, until sauce thickens enough to coat the back of a spoon.
  7. Add egg noodles to the boiling water and cook according to package directions (usually 6-8 minutes). Drain in a colander; do not rinse.
  8. Remove the skillet from the heat and let it sit for 1 minute to cool slightly. Stir in the sour cream until smooth and creamy. Season with salt and pepper to taste.
  9. Add drained egg noodles to the skillet and gently toss until well coated. If sauce is too thick, add a splash of warm water or milk.
  10. Garnish with fresh parsley if using and serve immediately in warm bowls.

Notes

For best results, let sour cream come to room temperature before adding to prevent curdling. Cook noodles al dente as they will continue to cook in the sauce. The sauce thickens as it sits; keep warm broth on hand to thin if needed.
