  • 1 cup (125 g) all-purpose flour
  • 1/2 cup (100 g) packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113 g) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray. Place the butter for the streusel in the fridge to keep cold.
  2. Make the salted caramel sauce: In a medium saucepan over medium heat, melt 1/2 cup unsalted butter. Stir in 1 cup packed brown sugar and cook, stirring constantly, until the sugar dissolves and the mixture bubbles, about 2-3 minutes. Slowly pour in 1/2 cup heavy cream while whisking constantly. Let simmer for 1 minute, then remove from heat. Stir in 1 teaspoon vanilla extract and 1/2 teaspoon flaky sea salt. Set aside to cool slightly.
  3. Prepare the apple filling: In a large bowl, toss the sliced apples with 1/4 cup granulated sugar, 1 tablespoon all-purpose flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1 tablespoon lemon juice until evenly coated. Spread the apple mixture evenly in the prepared baking dish.
  4. Make the oat streusel: In a separate large bowl, combine 1 cup rolled oats, 1 cup all-purpose flour, 1/2 cup packed brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Add the cold, cubed butter. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized butter pieces. Do not overmix.
  5. Assemble the crisp: Pour about half of the salted caramel sauce over the apples in the baking dish. Sprinkle the oat streusel evenly over the top. Do not press it down.
