This loaded nacho football dip is everything you want in a game day recipe. It’s quick, easy, and absolutely packed with flavor, featuring a creamy, cheesy, meaty base that comes together in just 30 minutes.

  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning
  • 8 ounces cream cheese, softened to room temperature
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper, to taste
  • For serving: Tortilla chips, sliced jalapeños, diced tomatoes, sliced black olives, chopped fresh cilantro, and extra sour cream

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 6-8 minutes, breaking it up with a wooden spoon, until no longer pink. Drain excess fat.
  3. Sprinkle taco seasoning over the beef and add 1/4 cup water. Stir and simmer for 2-3 minutes until thickened.
  4. In a large mixing bowl, combine softened cream cheese, undrained Rotel, salsa, sour cream, garlic powder, onion powder, and smoked paprika. Stir until smooth.
  5. Add the seasoned ground beef to the cream cheese mixture and stir until fully incorporated. Fold in 1 cup of shredded cheddar cheese.
  6. Spread the mixture evenly into a greased 9×13-inch baking dish.
  7. Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top.
  8. Bake for 15-20 minutes until hot and the cheese is melted and starting to brown. Optionally, broil for the last 2 minutes for a more golden top.
  9. Let the dip rest for 5 minutes before serving.
  10. Add fresh toppings just before serving: chopped cilantro, sliced jalapeños, diced tomatoes, black olives, and a dollop of sour cream. Serve immediately with tortilla chips.

Notes

Let cream cheese come to room temperature for smooth melting. Do not overcook the beef. Watch the broiler closely to avoid burning. The dip can be assembled a day ahead and refrigerated; add 5-10 minutes to baking time. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Freezing is not recommended.
