  • 4 tablespoons unsalted butter, softened
  • 2 large eggs, room temperature
  • 1/2 cup brown sugar, packed (light or dark)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup milk (whole milk preferred, or 2%)
  • 1 1/2 cups pecans, roughly chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed (for topping)
  • 4 tablespoons unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon (for topping)
  • 1/4 teaspoon salt (for topping)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and scrub sweet potatoes, prick each with a fork, and place on a rimmed baking sheet lined with parchment paper or foil. Roast for 45-60 minutes until tender. Let cool until handleable, about 15-20 minutes.
  2. Peel the roasted sweet potatoes and place flesh in a large mixing bowl. Add softened butter and mash or beat until smooth. Add eggs, brown sugar, vanilla, salt, cinnamon, nutmeg, and milk. Mix until well combined and silky.
  3. In a medium bowl, combine chopped pecans, flour, brown sugar, cinnamon, and salt. Add cold cubed butter and work into dry ingredients using a pastry cutter, forks, or fingertips until mixture resembles coarse crumbs with some pea-sized butter pieces remaining.
  4. Spread sweet potato mixture evenly into a greased 9×13-inch baking dish. Sprinkle pecan crumble evenly over the top without pressing down. At this point, either bake immediately or cover and refrigerate for up to 24 hours.
  5. When ready to bake, preheat oven to 350°F (175°C). If refrigerated, let sit at room temperature for 20 minutes. Bake uncovered for 35-45 minutes until topping is golden brown and filling is bubbly around the edges. Let rest for 10 minutes before serving.

Notes

For best results, toast pecans at 350°F for 5-7 minutes before using. Cold butter is essential for the crumble topping. Do not overmix sweet potatoes to avoid a gummy texture. Let casserole rest 10 minutes after baking to set. This casserole tastes even better the next day.
