This maple roasted turkey breast with apple stuffing is juicy, flavorful, and surprisingly easy to make. A sweet maple glaze creates a sticky, golden crust while the apple stuffing absorbs all those savory juices, making it perfect for weeknight dinners or special occasions.

  • 1 bone-in, skin-on turkey breast (about 3–4 pounds / 1.4–1.8 kg)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/3 cup pure maple syrup
  • 2 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon cinnamon (optional)
  • 6 cups day-old bread cubes (about 8–10 slices)
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 celery stalks, diced
  • 2 medium apples, diced (Honeycrisp or Granny Smith)
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low-sodium chicken broth
  • 1 large egg, beaten
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Take the turkey breast out of the refrigerator 30 minutes before cooking. Pat it completely dry with paper towels.
  2. Preheat your oven to 375°F (190°C). Combine salt, pepper, thyme, rosemary, and garlic powder in a small bowl.
  3. Rub olive oil all over the turkey, getting under the skin if possible. Sprinkle the seasoning mixture evenly over the entire surface.
  4. In a small saucepan over medium heat, combine maple syrup, butter, Dijon mustard, apple cider vinegar, and cinnamon if using. Whisk until butter melts and mixture thickens slightly, about 2-3 minutes. Remove from heat and set aside half of the glaze for later.
  5. In a large skillet over medium heat, melt 2 tablespoons butter. Add diced onion and celery and cook for 4-5 minutes until softened. Add diced apples and cook for 2 more minutes. Stir in sage, thyme, salt, and pepper, and cook for 30 seconds.
  6. Place bread cubes in a large mixing bowl. Pour the cooked vegetable mixture over the bread. In a separate bowl, whisk together chicken broth and beaten egg. Pour over bread mixture and toss gently until evenly moistened. Fold in dried cranberries if using.
  7. Transfer stuffing to a roasting pan and spread in an even layer. Place seasoned turkey breast on top of the stuffing, skin side up.
  8. Roast for 45 minutes. Brush half of the reserved maple glaze over the turkey. Continue roasting for another 15 minutes.
  9. Brush the remaining glaze over the turkey. Roast for another 10-15 minutes, or until internal temperature reaches 160°F (71°C) in the thickest part of the breast.
  10. Remove from oven and tent loosely with aluminum foil. Let rest for 15-20 minutes. The temperature will rise to 165°F (74°C).
  11. Slice turkey breast against the grain and serve with apple stuffing on the side. Spoon any pan juices over the top.

Notes

Don’t skip drying the turkey skin for crispy results. Use a thermometer to avoid overcooking. Let the turkey rest before carving. The maple glaze can be made up to 3 days ahead. For crispier stuffing edges, spread it in a thinner layer. Two glaze applications are perfect; more may burn the sugar.
