These mini turkey meatball sub sliders are perfect for game day gatherings. Baked meatballs are tender and juicy, topped with marinara and provolone on soft slider buns, all ready in under 45 minutes.

Ingredients

Scale
  • 1 pound ground turkey (93/7 lean)
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ cups marinara sauce
  • 12 slider buns (brioche recommended)
  • 6 slices provolone cheese, halved
  • 2 tablespoons butter, melted
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, panko breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix with hands until just combined; do not overmix.
  3. Form mixture into 12 evenly sized meatballs (about 1½ inches each). Place on prepared baking sheet with space between each.
  4. Bake meatballs for 12-14 minutes until browned and cooked through (internal temperature reaches 165°F/74°C).
  5. While meatballs bake, warm marinara sauce in a small saucepan over medium-low heat.
  6. Slice slider buns in half horizontally. Place bottom halves in a 9×13 baking dish. Spoon a little warm sauce over each bottom bun, place a meatball on top, spoon more sauce over meatball, and top with half a slice of provolone. Place top buns on.
  7. Brush tops of buns with melted butter. Cover dish loosely with aluminum foil and bake at 375°F (190°C) for 10 minutes. Remove foil and bake another 5 minutes until cheese is melted and buns are golden.
  8. Let sliders rest for 2-3 minutes before serving. Garnish with fresh parsley if desired.

Notes

Don’t overwork the meatball mixture to keep them tender. Bake instead of frying for easier prep and juicy results. Warm sauce separately to keep everything hot. Cover with foil first to steam buns, then uncover to crisp tops. Let rest before serving to prevent sliders from falling apart.
