This one-pot lasagna soup delivers all the rich, cheesy comfort of traditional lasagna without the layering or baking. Ready in under an hour, it’s perfect for impressing guests or turning a simple weeknight dinner into something memorable.

  • 1 lb ground beef (85/15 blend)
  • 1 medium yellow onion, diced fine
  • 4 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes (preferably San Marzano)
  • 4 cups low-sodium chicken broth
  • 8–10 lasagna noodles, broken into 2-inch pieces
  • 1 cup full-fat ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup finely grated Parmesan cheese
  • A handful fresh basil, for garnish
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Instructions

  1. Brown the beef: Heat 2 tablespoons olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add ground beef and cook, breaking it up, until deeply browned, about 6-8 minutes. Spoon out excess fat, leaving about 1 tablespoon.
  2. Sweat the aromatics: Add diced onion and cook 3-4 minutes until translucent, scraping up brown bits. Add minced garlic, Italian seasoning, and red pepper flakes; cook 30 seconds until fragrant.
  3. Build the broth: Pour in crushed tomatoes and chicken broth. Stir, scraping bottom of pot. Bring to a boil, then reduce heat to a simmer. Let bubble gently for 10 minutes.
  4. Cook the pasta: Break lasagna noodles into rough 2-inch pieces. Add to simmering broth and stir immediately. Cook according to package directions (about 10-12 minutes), stirring occasionally, until al dente.
  5. Add the cheeses: Reduce heat to low. Stir in ½ cup ricotta, shredded mozzarella, and grated Parmesan until melted and creamy. Taste and adjust salt and pepper.
  6. Serve and garnish: Ladle soup into wide bowls. Top each with a generous dollop of remaining ricotta (about 1 tablespoon per bowl). Sprinkle with fresh basil and extra Parmesan.

Notes

If soup gets too thick as it sits, add a splash of hot broth or water. For make-ahead, prepare through step 3 a day ahead, then reheat and continue. To freeze, freeze broth before adding pasta and dairy; add fresh pasta and cheeses when reheating.
