  • 1/4 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Cook the sweet potatoes (5 minutes): Place the peeled and cubed sweet potatoes in a microwave-safe bowl. Add 2 tablespoons of water. Cover the bowl with a microwave-safe lid or a plate. Microwave on high for 4-5 minutes, or until the potatoes are very tender when pierced with a fork. Be careful when removing the lid—the steam is hot! Drain any excess water.
  2. Mash the sweet potatoes (2 minutes): While the sweet potatoes are still hot, add the 3 tablespoons of melted butter, 2 tablespoons of brown sugar, cinnamon, nutmeg, and salt to the bowl. Mash everything together with a potato masher until smooth. Let the mixture cool for about 2 minutes so it doesn’t cook the egg.
  3. Finish the base (2 minutes): Stir in the beaten egg and the milk until everything is well combined. The mixture should be smooth and creamy. If it looks a little loose, that’s okay—it will firm up as it bakes.
  4. Make the streusel topping (5 minutes): In a small bowl, combine the flour, 1/2 cup brown sugar, chopped pecans, and 1/2 teaspoon of cinnamon. Add the cold, cubed butter. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. Don’t overmix! The little bits of butter are what create a flaky, crunchy streusel.
  5. Assemble the casserole (2 minutes): Preheat your oven to 375°F (190°C). Lightly grease your 8×8-inch baking dish. Spread the sweet potato mixture evenly into the prepared dish. Sprinkle the pecan streusel topping evenly over the top. Don’t press it down—just let it sit on top.
  6. Bake (18-20 minutes): Bake for 18-20 minutes, or until the streusel is golden brown and the filling is set and slightly bubbling around the edges. The kitchen will smell absolutely incredible at this point.
  7. Cool and serve (5 minutes): Let the casserole cool for at least 5 minutes before serving. This allows the filling to set up a bit more, making it easier to scoop. Serve warm.
