  • 1 3/4 cups (220 g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 12–15 soft caramel candies (like Kraft), unwrapped
  • 2 tablespoons heavy cream (or whole milk)
  • Flaky sea salt (like Maldon), for sprinkling

Instructions

  1. Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 12-15 minutes, stirring occasionally, until reduced to about 1/4 cup. Pour into a small bowl and let cool completely.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes. Scrape down the sides.
  4. Beat in the egg and vanilla extract until well combined. Add the cooled apple cider syrup and mix until just incorporated.
  5. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Using a cookie scoop (1.5-tablespoon size), portion the dough into balls and place them on the prepared baking sheets, spacing about 2 inches apart. Refrigerate for 15 minutes.
  8. Bake for 10-12 minutes, until edges are set and lightly golden. Centers will still look soft. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, place the unwrapped caramels and heavy cream in a small microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth and melted (about 60-90 seconds total).
  10. Drizzle the melted caramel over the cooled cookies. Immediately sprinkle a tiny pinch of flaky sea salt over the caramel on each cookie.
