A tender, restaurant-quality slow cooker beef and broccoli that requires minimal active prep time. This recipe uses chuck roast and fresh aromatics to create a savory-sweet sauce with perfectly crisp broccoli.

  • 2 lbs (900g) Beef Chuck Roast, sliced against the grain into thin strips
  • 4 cups (~300g) Fresh Broccoli Florets
  • 1/2 cup (120ml) Soy Sauce (low-sodium recommended)
  • 1/2 cup (120ml) Beef Broth (low-sodium)
  • 1 tbsp (15ml) Dark Soy Sauce
  • 2 tbsp (30ml) Oyster Sauce
  • 1 tbsp (15g) Fresh Ginger, minced
  • 4 cloves Garlic, minced
  • 2 tbsp (15g) Cornstarch mixed with 2 tbsp cold water
  • 1 tsp (5ml) Toasted Sesame Oil
  • 1 tbsp (15g) Sugar or Honey
  • 1/2 tsp Red Pepper Flakes (optional)

Instructions

  1. Slice the beef chuck roast against the grain into thin, 1/4-inch strips. If the meat is too soft, freeze for 20 minutes to firm it up.
  2. In a large bowl, whisk together soy sauce, dark soy sauce, beef broth, oyster sauce, ginger, garlic, sugar, and red pepper flakes.
  3. Pour the sauce mixture over the beef strips and toss to coat. Let it marinate while prepping vegetables.
  4. Transfer the beef and marinade to a 4-to-6-quart slow cooker, spreading it into an even layer.
  5. Cover and cook on Low for 6-8 hours or on High for 3-4 hours, until the beef is fork-tender.
  6. While the beef cooks, blanch broccoli florets in boiling salted water for 2-3 minutes until bright green and crisp-tender. Drain and shock in ice water if possible.
  7. Whisk cornstarch with cold water to create a smooth slurry.
  8. Once beef is tender, turn slow cooker to High. Stir in the cornstarch slurry and cook for 2-3 minutes until the sauce thickens.
  9. Gently fold in the blanched broccoli. Cover and cook on High for 5 minutes to heat through.
  10. Drizzle with toasted sesame oil, stir once, and serve immediately over steamed rice.

Notes

Slice beef against the grain for maximum tenderness. Add broccoli at the very end to prevent it from becoming mushy. Blanching ensures vibrant color and crunch. If sauce is too thin, add more cornstarch slurry; if too thick, add a splash of broth.
