Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Cream the butter and sugar. In a medium bowl, beat the softened butter and 1/4 cup granulated sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed. Scrape down the sides once.
  3. Add the egg yolk and vanilla. Drop in the egg yolk and vanilla extract, then beat until combined, about 30 seconds.
  4. Whisk the dry ingredients separately. In a small bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Combine wet and dry ingredients. Add the dry mixture to the wet mixture and stir with a spatula until just combined. A few streaks of flour are fine.
  6. Make the cinnamon-sugar coating. In a small shallow bowl, mix together the 1 tablespoon sugar and 1/2 teaspoon cinnamon. Set aside.
  7. Shape and coat the cookies. Using a 1.5-tablespoon cookie scoop or your hands, divide the dough into 6 equal portions (about 1.5 tablespoons each). Roll each portion into a smooth ball, then roll generously in the cinnamon-sugar mixture. Place them on the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 10-12 minutes. Bake until the edges are set and lightly golden, but the centers still look slightly soft and puffy.
  9. Cool on the baking sheet for 5 minutes. Let them rest on the hot sheet, then transfer to a wire rack to cool completely.
