  • 8 ounces Gouda cheese block
  • 6 ounces hard salami stick
  • 1 cup whole almonds
  • 1 cup pretzel bites
  • 4 ounces sliced prosciutto
  • 4 ounces sliced soppressata
  • 1/2 cup mixed olives
  • 1/2 cup cornichons or pickled vegetables
  • 1/4 cup honey
  • 1 tablespoon whole grain mustard
  • Fresh grapes or apple slices
  • Fresh rosemary sprigs
  • 1/4 cup unsalted butter (softened)
  • 2 tablespoons honey (for honey butter dip)
  • Pinch of flaky sea salt

Instructions

  1. Preheat smoker to 200°F (93°C) using apple wood chips or pellets for mild smoke.
  2. Let cheddar and Gouda blocks sit at room temperature for 10 minutes. Place cheese, almonds, and whole salami directly on smoker grate or on parchment paper.
  3. Smoke cheese, almonds, and salami for exactly 20 minutes. Cheese should look glossy and soft; almonds darkened slightly; salami more reddish.
  4. Remove smoked items and cool on a wire rack for 30 minutes. For make-ahead, wrap cheese tightly in plastic wrap and refrigerate overnight.
  5. If serving immediately, toss pretzel bites in smoker for 5 minutes to warm and absorb smoke flavor.
  6. Mix softened butter, 2 tablespoons honey, and flaky sea salt in a small bowl until smooth for honey butter dip.
  7. Assemble board: Place ramekins of honey, mustard, and honey butter dip as anchors. Slice smoked cheese into cubes or wedges, slice salami into rounds. Arrange cheese, salami, prosciutto (folded into ribbons), soppressata, smoked almonds, olives, cornichons, and fruit on board. Pile warm pretzel bites near honey butter dip. Garnish with rosemary sprigs.
  8. Serve immediately at room temperature. If refrigerated, let sit out 20 minutes before serving. Reheat pretzel bites in 300°F oven for 3-4 minutes if needed.

Notes

Keep smoke light and low; thick white smoke (creosote) will make food bitter. Let smoked cheese rest at room temperature for 30 minutes or overnight in fridge to mellow flavor. Slice cheese right before serving to prevent drying. Toast almonds in a dry pan for 3-4 minutes before smoking for extra crunch. Use a timer for pretzel bites to avoid drying out.
