Ingredients

Scale
  • 3 pounds chicken wings (about 1518 wings), split into drumettes and flats
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons sesame seeds, toasted
  • 3 green onions, thinly sliced
  • Fresh cilantro sprigs (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the upper third of the oven. Line a baking sheet with parchment paper or foil, then place a wire rack on top.
  2. Pat the chicken wings completely dry with paper towels. In a large bowl, combine the baking powder, salt, pepper, garlic powder, and smoked paprika. Add the wings and toss until evenly coated.
  3. Arrange the seasoned wings on the wire rack in a single layer, making sure they are not touching.
  4. Bake for 25 minutes, then flip each wing using tongs. Continue baking for another 20-25 minutes, until the skin is golden brown and crispy and the internal temperature reaches 165°F (74°C).
  5. While the wings are baking, make the glaze: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, grated ginger, sesame oil, and red pepper flakes. Bring to a simmer over medium heat, stirring occasionally. Let it bubble gently for 5-7 minutes until slightly thickened. Slowly whisk in the cornstarch slurry and cook until thickened. Remove from heat.
  6. Once the wings are crispy, remove them from the oven. Transfer to a large bowl and pour about two-thirds of the glaze over them. Toss gently until every wing is coated.
  7. Return the glazed wings to the wire rack. Turn your oven to broil and cook for 2-3 minutes, watching carefully, until the glaze bubbles and caramelizes.
  8. Remove from the oven and transfer back to the bowl. Pour the remaining glaze over them and toss one more time. Sprinkle with toasted sesame seeds and sliced green onions. Garnish with fresh cilantro if desired. Serve immediately.

Notes

For extra crispy skin, pat wings dry and let them sit uncovered in the refrigerator for 30 minutes to 1 hour before seasoning. Do not skip the baking powder—it creates crispy bubbles on the skin. Watch the broiler carefully as honey burns quickly. For a double-glaze effect, toss with glaze, broil 2 minutes, toss with remaining glaze, and broil another minute. Wings are best served immediately but are still delicious at room temperature.
