Instructions

  1. Preheat your oven to 350°F (175°C). Line your pizza pan with parchment paper or lightly grease it to prevent sticking.
  2. In a large bowl, cream together 1 cup softened butter and 1 cup brown sugar with an electric mixer until fluffy and light, about 3-4 minutes.
  3. Add the egg and 1 ½ teaspoons vanilla extract. Beat until combined.
  4. In a separate bowl, whisk together 2 ½ cups flour, ½ teaspoon baking powder, and ¼ teaspoon salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  5. Press the dough evenly into the prepared pizza pan, making sure it reaches the edges.

  9. Spread the honey cream cheese mixture evenly over the cooled cookie crust.
  10. Arrange sliced fruit on top of the cream cheese layer in a colorful pattern.
  11. Optional: Garnish with fresh mint leaves.
  12. Chill the fruit pizza in the fridge for at least 30 minutes before serving.
