A set-it-and-forget-it slow cooker cinnamon roll casserole that’s perfect for Christmas morning. Soft, custardy rolls with a buttery caramel sauce and glossy glaze, all made with pantry-friendly ingredients.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with icing
  • 4 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup packed brown sugar (for caramel sauce)
  • 2 tablespoons unsalted butter, cubed (for caramel sauce)
  • 2 tablespoons heavy cream (for caramel sauce)
  • Pinch of sea salt (for caramel sauce)
  • Icing packets from the cinnamon rolls (for glaze)
  • Optional: 2 tablespoons cream cheese, softened (for glaze)

Instructions

  1. Grease the inside of a 6-quart slow cooker with butter or non-stick spray. Optionally, use a slow cooker liner.
  2. Open both cans of cinnamon rolls. Reserve the icing packets. Cut each roll into quarters using a sharp knife or kitchen shears.
  3. Arrange the cut roll pieces in the slow cooker in an even layer, leaving some air gaps.
  4. In a medium mixing bowl, whisk together eggs, heavy cream, milk, melted butter, vanilla extract, and ground cinnamon until smooth and pale yellow.
  5. Slowly pour the custard mixture over the cinnamon roll pieces, pressing down gently with a spatula. Let sit for 5 minutes.
  6. Optional: In a small saucepan over medium heat, combine brown sugar, cubed butter, and heavy cream. Stir constantly until butter melts and sugar dissolves (about 3 minutes). Let bubble for 1 minute, then remove from heat and stir in sea salt. Drizzle over the casserole.
  7. Cover the slow cooker and cook on LOW for 2 to 2.5 hours, or on HIGH for 1.5 to 2 hours, until center is set and edges are golden brown.
  8. Turn off the slow cooker and let rest for 5 minutes. Squeeze reserved icing packets over the top. If using cream cheese, stir it into the icing first.
  9. Serve immediately, or keep warm on the ‘WARM’ setting for up to 2 hours.

Notes

For best results, let the custard soak into the rolls for 5-10 minutes before cooking. Start checking for doneness at the 1.5-hour mark on LOW. Use a slow cooker liner for easy cleanup. The casserole can be assembled the night before and refrigerated; let it sit at room temperature for 20 minutes before cooking.
