Comforting Swamp Potatoes Cheesy Sausage Crockpot Casserole

A warm, cheesy, and satisfying casserole combining swamp potatoes and savory sausage slow-cooked to perfection. Easy to prepare and perfect for family meals.

  • 3 pounds swamp potatoes (or Yukon Gold potatoes), peeled and diced
  • 1 pound ground sausage (mild, spicy, or Italian)
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream or whole milk
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Peel and dice 3 pounds of swamp potatoes into roughly 1-inch cubes. Rinse and pat dry to remove excess starch.
  2. Heat a large skillet over medium heat. Add 1 pound of ground sausage and cook until no longer pink, breaking it apart with a spatula (7–8 minutes). Drain excess fat if needed.
  3. Add 1 finely chopped onion and 3 minced garlic cloves to the skillet with sausage. Cook until onions are translucent and fragrant, about 3–4 minutes.
  4. In a large bowl, combine 2 cups shredded sharp cheddar cheese, 1 cup heavy cream, 2 tablespoons melted butter, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon smoked paprika if using. Stir until smooth and creamy.
  5. Add the diced potatoes and sausage mixture to the cheese mixture. Stir gently to coat everything evenly.
  6. Pour the mixture into the crockpot and spread evenly. Cover with the lid.
  7. Cook on low for 4–5 hours or on high for 2–3 hours until potatoes are tender and cheese sauce is bubbly and thickened.
  8. About 10 minutes before serving, sprinkle extra shredded cheese on top if desired and garnish with chopped fresh parsley.

Notes

Brown the sausage properly and drain excess fat to avoid greasiness. Be gentle when mixing potatoes to keep chunks intact. Use fresh shredded cheese for better melting. Cooking low and slow yields the best texture. The casserole tastes better the next day after flavors meld. Can be baked at 350°F for 45-50 minutes if no crockpot is available.
