  • 1½ tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

  • ¼ teaspoon vanilla extract (optional)
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Rinse the pumpkin seeds thoroughly in a colander under cold water, rubbing them to remove any pulp.
  3. Pat the seeds dry with paper towels until damp but not soaking wet.
  4. In a small bowl, combine the granulated sugar, ground cinnamon, and salt. Stir with a fork until evenly mixed.
  5. Place the damp seeds in a medium mixing bowl and drizzle the melted butter over them. Toss until every seed is coated.
  6. Sprinkle the cinnamon-sugar mixture over the buttered seeds and toss again until evenly coated.
  7. Transfer the coated seeds to the air fryer basket and spread them in a single layer.
  8. Cook at 320°F for 5 minutes. Remove the basket, shake it well, and stir the seeds with a spatula.
  9. Return the basket to the air fryer and cook for another 3-5 minutes, checking at the 3-minute mark. Seeds should be golden brown and smell toasty.
  10. Remove the seeds immediately from the air fryer basket and spread them on a plate or parchment paper to cool completely (about 10-15 minutes) before serving or storing.

Notes

Don’t skip rinsing the seeds—leftover pulp can burn. Shake the basket halfway through for even cooking. Let seeds cool completely for maximum crunch. For best results, do not overcrowd the basket; cook in batches if needed.
