  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar (150g)
  • 1/4 cup vegetable oil (60ml)
  • 2 large eggs, room temperature
  • 1 cup pure pumpkin puree (240g), canned or homemade
  • 1 teaspoon vanilla extract
  • 1/3 cup buttermilk (80ml) or milk plus 1 teaspoon lemon juice
  • 1/3 cup apple cider (80ml)
  • 1 cup powdered sugar (120g)
  • 2 tablespoons unsalted butter, melted
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a mini donut hole pan with non-stick spray or butter.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a medium bowl, whisk sugar and vegetable oil until smooth. Add eggs one at a time, beating well after each.
  4. Stir in pumpkin puree and vanilla extract. Mix in buttermilk until fully incorporated.
  5. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; some lumps are okay.
  6. Spoon batter into pan cavities, filling each about 3/4 full. Bake for 12-14 minutes or until a toothpick inserted comes out clean.
  7. Let donut holes cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
  8. To make glaze, simmer apple cider in a small saucepan over medium heat until reduced by half (about 5 minutes). Let cool slightly.
  9. Whisk reduced cider with powdered sugar, melted butter, cinnamon, and salt until smooth. Adjust thickness as needed.
  10. Dip the top of each cooled donut hole into the glaze, letting excess drip off. Place back on cooling rack to set.

Notes

Do not overmix the batter to avoid tough donut holes. Let donut holes cool completely before glazing to prevent glaze from sliding off. If glaze is too runny, chill in fridge to thicken. Use a mini muffin pan if you don’t have a donut hole pan, adjusting baking time slightly.
