Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel, core, and slice 6 large apples into roughly ½-inch thick slices. Toss them in a mixing bowl with 2 tablespoons granulated sugar, 1 tablespoon brown sugar, 1 teaspoon cinnamon, ½ teaspoon nutmeg, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract until evenly coated.
  3. Transfer the apple mixture to an oven-safe baking dish (around 9×9 inches), spreading evenly and pressing down gently without mashing.
  4. In a medium saucepan over medium heat, melt ½ cup unsalted butter. Stir occasionally and watch as it foams and changes from yellow to a rich golden brown with a nutty aroma (about 4-6 minutes). Remove from heat immediately once browned.
  5. In a large bowl, combine 1 cup rolled oats, ⅓ cup all-purpose flour, ½ cup light brown sugar, ½ teaspoon salt, ½ teaspoon cinnamon, and optional ¼ cup chopped nuts. Pour the warm brown butter over the mixture and stir until evenly coated and clumping slightly.
  6. Spread the oat topping evenly over the apples in the baking dish.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping browns too fast, tent loosely with foil during the last 10 minutes.
  8. Remove from oven and let cool for at least 10 minutes to allow juices to settle.

Notes

Use a light-colored pan to brown butter to easily monitor color change. If apples seem watery, sprinkle 1 tablespoon cornstarch over them before adding topping.
