These cozy apple dumplings feature tender apples wrapped in flaky pastry, baked in a warm cinnamon sugar sauce. Perfect for fall baking, they’re quick to make with simple ingredients and always impress.

  • 4 medium firm apples (Honeycrisp, Granny Smith, or Braeburn), peeled and cored
  • 1 package refrigerated pie crust (2 crusts)
  • 6 tablespoons unsalted butter, cold
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 large egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • Optional: Turbinado sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and core the apples, leaving the bottom intact so filling stays inside.
  3. In a small bowl, combine ½ cup granulated sugar, 1 teaspoon cinnamon, and nutmeg. Stir with a fork.
  4. Unroll pie crusts on a lightly floured surface. Roll each out slightly to about 2 inches wider in diameter. Cut each crust into 4 equal squares (8 squares total).
  5. Place one apple in the center of a pie crust square. Spoon about 1 tablespoon of the cinnamon sugar mixture into the hollowed core. Dot with about ½ tablespoon cold butter, cut into small pieces.
  6. Bring the corners of the pie crust square up to the top of the apple, overlapping slightly. Press seams to seal. Place seam-side down in an 8×8 baking dish. Repeat with remaining apples and dough squares.
  7. In a small saucepan, combine remaining ½ cup granulated sugar, brown sugar, remaining 1 teaspoon cinnamon, and 1 cup water. Stir over medium heat until sugars dissolve, about 3 minutes. Remove from heat and stir in vanilla extract.
  8. Slowly pour the warm sauce around the dumplings (not directly on top). Dot remaining 3 tablespoons cold butter over the sauce in the dish.
  9. In a small bowl, beat egg with 1 tablespoon water. Brush tops of each dumpling with egg wash. Sprinkle with turbinado or regular sugar if desired.
  10. Bake for 50-55 minutes, placing dish on a baking sheet to catch overflow, until crust is deep golden brown and sauce is bubbling. Let cool for 10 minutes before serving.

Notes

Let dumplings rest 10 minutes after baking for sauce to thicken. For best results, pour sauce around dumplings, not on top, to keep crust crispy. Use a baking sheet underneath to catch overflow.
