Instructions

  1. Cook the Sweet Potatoes: Wash and dry sweet potatoes, pierce with a fork, rub with olive oil and salt. Microwave on high for 5-7 minutes, flipping halfway, until fork-tender. Alternatively, bake at 400°F (200°C) for 45-50 minutes. Let cool slightly.
  2. Make the Buffalo Chicken Filling: In a small saucepan over low heat (or microwave), combine buffalo wing sauce and melted butter; warm for about 1 minute. In a medium bowl, toss shredded chicken with the warm sauce mixture. Stir in Greek yogurt (or sour cream) until creamy. Fold in diced celery and most of the sliced green onions. If using blue cheese, stir in half now.
  3. Assemble the Stuffed Potatoes: Slice each sweet potato in half lengthwise. Fluff the flesh with a spoon. Optionally, scoop out about 2 tablespoons of flesh from each half and mix into the chicken filling for extra creaminess.
  4. Stuff and Finish: Divide the buffalo chicken mixture evenly among the four sweet potato halves. Sprinkle remaining blue cheese (or other cheese) on top. For melty cheese, broil for 1-2 minutes, watching closely.
  5. Serve Immediately: Transfer to plates. Drizzle with extra Greek yogurt or sour cream, and sprinkle with remaining green onions and extra blue cheese. Serve hot.

Notes

For the most flavorful filling, mix a little cooked sweet potato flesh into the chicken mixture. Adjust buffalo sauce to control heat. For dairy-free, use dairy-free butter and plant-based yogurt. Leftovers can be stored separately in the fridge for up to 3 days; reheat in the oven at 350°F (175°C) for 10-15 minutes for best texture.
