  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon peppermint extract (optional)
  • 1 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder (Dutch-process preferred)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (270g) Andes Mint Chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Melt butter in a microwave-safe bowl in 30-second intervals; let cool for 5 minutes.
  3. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until combined.
  4. Whisk in eggs one at a time, then add vanilla and peppermint extract (if using).
  5. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  6. Gradually fold dry ingredients into wet mixture until just combined; do not overmix.
  7. Fold in 1 1/4 cups Andes Mint Chips; reserve 1/4 cup for topping.
  8. Scoop dough into 1.5-tablespoon balls and place 2 inches apart on prepared baking sheets.
  9. Press 3-4 reserved mint chips onto tops of each dough ball (optional).
  10. Bake for 10-12 minutes until edges are set and centers look slightly underdone.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature eggs to prevent butter from seizing. Check baking soda freshness by testing with vinegar. Use a kitchen scale for accurate flour and cocoa measurements. Cookies can be stored at room temperature for up to 5 days or frozen for up to 3 months.
