  • 6 medium apples (about 2 pounds or 900g), peeled, cored, and sliced into ¼-inch thick pieces (Honeycrisp and Granny Smith recommended)
  • ⅓ cup (70g) granulated sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon ground cinnamon (Saigon cinnamon recommended)
  • ¼ teaspoon ground nutmeg (optional)
  • 1 tablespoon (15ml) lemon juice
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (110g) packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter an 8×8-inch baking dish.
  2. Prepare the apples: peel, core, and slice into ¼-inch thick pieces (about 6 cups).
  3. In a large bowl, combine sliced apples with granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg (if using), and lemon juice. Toss to coat. Let sit while making the topping.
  4. In a medium bowl, whisk together rolled oats, ¾ cup flour, brown sugar, ½ teaspoon cinnamon, and salt. Cut in cold butter cubes using a pastry cutter or two forks until mixture resembles coarse meal with some pea-sized butter pieces.
  5. Pour apple mixture into prepared baking dish and spread evenly. Sprinkle oat crumble evenly over the top without pressing down.
  6. Place dish on a baking sheet. Bake for 40-45 minutes, until filling is bubbly around edges and topping is golden brown. If browning too quickly after 30 minutes, tent loosely with foil.
  7. Let cool on a wire rack for at least 10-15 minutes before serving.

Notes

For best results, keep butter cold and don’t overmix the crumble. Let apples macerate for 10 minutes to draw out juices. If apples are very juicy, add an extra tablespoon of flour to the filling. For a gluten-free version, use a 1:1 gluten-free baking flour. For a vegan version, use cold coconut oil or vegan butter.
