Cozy Classic Meatloaf with Brown Sugar Glaze – Easy Homemade Dinner

This isn’t just any meatloaf. This is the meatloaf that turns a regular Tuesday night into something a little bit special. It’s the kind of meal that makes the whole house smell like comfort, the kind that brings everyone to the table without being asked twice.

  • 1 ½ pounds ground beef (80/20 blend)
  • ½ pound ground pork
  • 1 cup plain breadcrumbs
  • ½ cup whole milk
  • 1 large egg, lightly beaten
  • 1 small yellow onion, finely diced (about ¾ cup)
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried thyme
  • ½ cup ketchup
  • ¼ cup packed light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×5-inch loaf pan with a little oil or non-stick spray.
  2. In your large mixing bowl, combine the breadcrumbs and milk. Stir them together and let them sit for about 5 minutes to create a panade.
  3. While the panade rests, heat a small skillet over medium heat. Add a drizzle of oil and sauté the diced onion for 3-4 minutes, until soft and translucent. Add the minced garlic and cook for another 30 seconds, until fragrant. Let this cool for a minute or two.
  4. To the bowl with the panade, add the cooled onion and garlic, the lightly beaten egg, Worcestershire sauce, salt, pepper, smoked paprika, and dried thyme. Mix everything together with a fork until well combined. Add the ground beef and ground pork. Using your hands, gently mix the meat into the other ingredients until just evenly distributed. Do not overmix.
  5. Transfer the meat mixture to your prepared loaf pan. Gently press it into the pan, making sure it’s evenly distributed. Form a slight indentation down the center of the loaf.
  6. In your small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, and garlic powder until the sugar is mostly dissolved and the glaze is smooth.
  7. Place the meatloaf in the preheated oven and bake for 45 minutes. After 45 minutes, carefully remove the pan from the oven and spoon about half of the brown sugar glaze over the top of the meatloaf, spreading it evenly. Return the pan to the oven and bake for another 15 minutes.
  8. Remove the meatloaf from the oven again and spoon the remaining glaze over the top. Tent the loaf pan loosely with a piece of aluminum foil. Let the meatloaf rest in the pan for at least 10-15 minutes.
  9. After resting, carefully slice the meatloaf with a sharp knife and serve.

Notes

Don’t skip the panade (breadcrumbs and milk mixture) as it ensures a moist meatloaf. Let the meatloaf rest for 10-15 minutes after baking to allow juices to redistribute. Use an instant-read thermometer to check for doneness (160°F / 71°C). For easy cleanup, line the loaf pan with parchment paper.
