Cozy Cranberry Brie Bites with Puff Pastry

Warm, melty, and comforting cranberry brie bites made with frozen puff pastry for an easy yet impressive appetizer. Perfect for holiday parties, game nights, or any occasion that calls for a crowd-pleasing treat.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2-inch pieces)
  • 1/2 cup whole berry cranberry sauce
  • 2 tablespoons chopped pecans or walnuts (optional)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Fresh rosemary or thyme sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly grease a 24-cup mini muffin tin with non-stick spray or butter.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut it into 24 equal squares—about 2 inches each (4 rows lengthwise and 6 rows crosswise).
  3. Gently place each square into a cup of the mini muffin tin, pressing it down to form a little cup with corners sticking up slightly above the rim.
  4. Place one cube of brie (about 1/2 inch) into each pastry cup.
  5. Spoon about 1 teaspoon of cranberry sauce over the brie in each cup, spreading gently to cover the cheese.
  6. Sprinkle a few chopped pecans or walnuts over the cranberry sauce in each cup (if using).
  7. In a small bowl, whisk together the egg and water. Using a pastry brush, lightly brush the exposed edges of the puff pastry with the egg wash.
  8. Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the pastry is puffed and golden brown and the brie is melted and bubbly.
  9. Remove the tin from the oven and let the bites cool in the pan for 5 minutes. Then use a small offset spatula or butter knife to gently lift them out of the tin and transfer to a serving platter.
  10. Sprinkle with fresh rosemary or thyme if using, and serve warm. Best enjoyed within 15-20 minutes of coming out of the oven.

Notes

Always remove the rind from brie before baking—it becomes tough and chewy. Keep puff pastry cold until ready to use for best flakiness. Rotate the muffin tin halfway through baking for even browning. Do not overfill pastry cups to prevent overflow. For make-ahead: assemble up to 24 hours in advance and refrigerate, then add 2-3 minutes to baking time. Can freeze unbaked bites for up to 2 months.
