  • 2 cups (300g) shredded cooked chicken (rotisserie recommended)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) ranch dressing
  • 1/2 cup (120ml) buffalo hot sauce (Frank’s RedHot recommended)
  • 1 cup (100g) shredded sharp or medium cheddar cheese
  • 1 cup (100g) shredded mozzarella cheese
  • 2 stalks green onions, thinly sliced
  • 1/2 cup (50g) celery, finely diced (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • Optional: blue cheese crumbles for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred about 2 cups (300g) of cooked chicken using your hands or forks.
  3. In a mixing bowl, beat 8 oz (225g) of softened cream cheese with 1/2 cup (120ml) of buffalo hot sauce until silky smooth.
  4. Stir in 1/2 cup (120ml) ranch dressing, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper.
  5. Fold in the shredded chicken, 1/2 cup (50g) diced celery, and 2 sliced green onions.
  6. Spread the mixture evenly into your prepared 9-inch baking dish.
  7. Sprinkle 1 cup (100g) shredded sharp cheddar and 1 cup (100g) shredded mozzarella evenly over the top.
  8. Bake for 20-25 minutes, until the cheese is melted, bubbly, and starting to brown around the edges. Add blue cheese crumbles in the last 5 minutes if using.
  9. Let the dip cool for 5 minutes before serving.

Notes

Use room temperature cream cheese for a smooth base. Whip cream cheese and hot sauce first to avoid lumps. Shred chicken finely for easier scooping. For extra crispy edges, use a cast iron skillet but watch baking time. Tent with foil if cheese browns too fast. Let dip cool before serving to avoid messiness.
