A forgiving, make-ahead green bean casserole with a creamy mushroom sauce and crispy fried onions. Perfect for stress-free holiday entertaining or cozy weeknight dinners.

  • 2 cans (10.5 oz each) cream of mushroom soup
  • ¾ cup whole milk (or 2%)
  • 1 tablespoon soy sauce
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 ½ cups crispy fried onions (divided: 1 ½ cups in casserole, 1 cup for topping)
  • ¼ teaspoon salt (or to taste)

Instructions

  1. If baking immediately, preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Thaw frozen green beans in a colander under cool water for 2-3 minutes. Drain well and pat dry. If using fresh, blanch in boiling salted water for 2 minutes, then plunge into ice water and drain.
  3. In a large mixing bowl, whisk together cream of mushroom soup, milk, soy sauce, black pepper, garlic powder, and onion powder until smooth. Taste and adjust seasoning.
  4. Add drained green beans and 1 ½ cups crispy fried onions to the sauce. Gently fold until beans are evenly coated.
  5. Transfer mixture to the prepared baking dish and spread into an even layer.
  6. Sprinkle remaining 1 cup crispy fried onions evenly over the top.
  7. If baking immediately: Bake for 25-30 minutes until bubbly and golden. If making ahead: Cover tightly and refrigerate for at least 8 hours or up to 24 hours.
  8. To bake from refrigerated: Let casserole sit at room temperature while oven preheats (about 15 minutes). Bake covered at 350°F for 20 minutes, then uncover and bake 10-15 minutes more until bubbly and hot throughout.
  9. Let rest 5-10 minutes before serving.

Notes

For best flavor, let the casserole rest in the fridge overnight. Add fresh crispy onions just before baking for maximum crunch. If top browns too quickly, tent with foil. Drain green beans thoroughly to avoid a watery casserole.
