  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup (60g) pecan halves, roughly chopped
  • 1 tablespoon (14g) unsalted butter
  • 1 tablespoon (15ml) maple syrup
  • 1 tablespoon (12g) packed brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Toast the pecans: Place a small skillet over medium heat. Add butter and let it melt. Add chopped pecans, 1 tablespoon maple syrup, brown sugar, and 1/4 teaspoon cinnamon. Stir constantly for 3-4 minutes until fragrant and caramelized. Remove from heat and spread on a plate to cool completely.
  2. Mix the wet ingredients: In a medium bowl, whisk together milk, Greek yogurt, 2 tablespoons maple syrup, vanilla extract, and a pinch of salt until smooth.
  3. Add the dry ingredients: Stir in rolled oats, chia seeds, and 1/2 teaspoon cinnamon until well combined.
  4. Assemble the jars: Divide the oat mixture evenly between 2-3 mason jars or airtight containers, leaving room at the top for topping.
  5. Top with cooled pecans: Once pecans are completely cool, sprinkle them over the top of each jar. Do not stir in.
  6. Refrigerate overnight: Cover jars and refrigerate for at least 6 hours, preferably 8-12 hours.
  7. Serve and enjoy: In the morning, stir if desired. Serve cold or microwave for 30-45 seconds for warm oats. Add extra milk or maple syrup if needed.

For best crunch, store pecans separately and add fresh each morning. Do not skip chia seeds—they help achieve the perfect pudding-like texture. Let oats rest at least 6 hours for best results. Adjust milk-to-oat ratio to your preference.
