  • 1 pound Brioche or Challah Bread, cut into 1-inch cubes
  • 2 tablespoons Butter, melted (for greasing)
  • 15 ounces Pumpkin Puree (not pie filling)
  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • 4 Large Eggs
  • 2 Large Egg Yolks
  • 1/2 cup Pure Maple Syrup
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Cardamom
  • 1/4 cup Coarse Sugar
  • 1/2 cup Pecans, chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with melted butter.
  2. Cut bread into 1-inch cubes. If fresh, spread cubes on a baking sheet and let sit for an hour to dry out slightly.
  3. In a large bowl, whisk together heavy cream, whole milk, eggs, and egg yolks until combined.
  4. Add pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, ginger, and cardamom. Whisk vigorously until smooth and uniform.
  5. Arrange bread cubes in the prepared baking dish.
  6. Pour the custard mixture evenly over the bread. Press down gently to ensure all bread is submerged.
  7. Let the dish sit for at least 30 minutes, or ideally overnight in the refrigerator.
  8. Sprinkle chopped pecans and coarse sugar over the top.
  9. Bake for 45-50 minutes until the top is golden brown and the center is set (knife inserted comes out clean).
  10. If browning too quickly, cover loosely with foil after 30 minutes.
  11. Let rest for 10 minutes before serving.

Notes

Use day-old bread for best absorption. Ensure you use plain pumpkin puree, not pie filling. For a lighter version, substitute heavy cream with whole milk. Can be assembled the night before and refrigerated overnight.
