  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced

  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 6 cups low-sodium chicken broth
  • 2 cups cooked, shredded chicken
  • 1 cup sun-dried tomatoes in oil, drained and chopped (reserve 2 tablespoons oil)
  • 1 cup heavy cream (or half-and-half)
  • ½ cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons all-purpose flour (optional, for thicker soup)
  • Fresh parsley or basil, chopped (for serving)
  • Crusty bread or garlic bread (for serving)

Instructions

  1. Sauté the Aromatics: Heat 2 tablespoons olive oil (or reserved sun-dried tomato oil) in a large Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until softened and onion is translucent. Add minced garlic, dried thyme, dried oregano, and red pepper flakes (if using). Cook for 1 more minute until fragrant.
  2. Build the Base: If using flour, sprinkle it over the vegetables and stir constantly for 1 minute. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot.
  3. Add the Tomatoes and Chicken: Stir in chopped sun-dried tomatoes and shredded chicken. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 15-20 minutes.
  4. Make it Creamy: Reduce heat to low. In a small bowl, whisk together heavy cream and grated Parmesan until smooth. Slowly pour into the soup, stirring constantly. Heat through for 2-3 minutes, but do not let it boil.
  5. Season and Serve: Taste and add salt and black pepper as needed. Ladle into bowls and top with fresh parsley or basil, extra Parmesan, and a crack of black pepper. Serve with crusty bread.

Notes

For best flavor, use oil from the sun-dried tomato jar for sautéing. Shred chicken while still warm. To prevent curdling, add cream on low heat and do not boil. Soup tastes even better the next day. For freezing, leave out the cream and add it after reheating.
