Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/3 cup creamy peanut butter (Jif or Skippy recommended)
  • 2 tablespoons powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. Melt 1/2 cup unsalted butter in a microwave-safe bowl in 30-second bursts until just melted. Set aside to cool slightly.
  3. In a medium bowl, whisk together the melted butter and 1 cup granulated sugar until well combined. Add 2 room-temperature eggs and 1 teaspoon vanilla extract. Whisk vigorously for about 1 minute until smooth and slightly thickened.
  4. Sift 1/3 cup cocoa powder, 1/2 cup flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder into the wet mixture. Fold gently with a spatula until just combined. Do not overmix.
  5. In a small bowl, combine 1/3 cup creamy peanut butter, 2 tablespoons powdered sugar, 2 tablespoons milk, and 1/4 teaspoon vanilla extract. Stir until completely smooth. The mixture should be thick but spreadable.
  6. Pour the brownie batter into the prepared pan and spread evenly.
  7. Drop spoonfuls of the peanut butter mixture randomly over the brownie batter. Use a toothpick or wooden skewer to drag through the peanut butter and batter in a swirling motion to create a web pattern. Do not over-swirl.
  8. Bake for 25-28 minutes. The edges should look set and the center should still look slightly underdone. A toothpick inserted in the center should come out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack for 30-45 minutes. The web pattern sets as they cool.
  10. Once cool, use the parchment handles to lift the brownies out. Cut into 9 or 16 squares with a sharp knife, wiping the blade clean between cuts.

Notes

Use processed peanut butter (like Jif or Skippy) for the web, not natural peanut butter, as the oils in natural peanut butter cause the web to bleed. Room temperature eggs are essential to prevent the melted butter from seizing. Do not overbake; the center should look slightly underdone when removed from the oven. For clean cuts, chill the brownies for 30 minutes before slicing.
