A smoky, sweet, and eerie apple cocktail served with dry ice for a dramatic fog effect. Recreated from a beloved Portland bar, this drink balances tart green apple, warm cinnamon, and smooth vodka for a cozy yet spooky treat.

Ingredients

Scale
  • 2 oz vodka (preferably Tito’s)
  • 3 oz fresh apple cider (unfiltered)
  • ½ oz fresh lemon juice
  • ½ oz cinnamon simple syrup
  • 1 cup granulated sugar
  • 1 cup water
  • 3 cinnamon sticks (broken in half)
  • 1 tsp vanilla extract
  • 1 small piece food-grade dry ice (walnut-sized)
  • 1 thin slice green apple (for garnish)
  • 1 cinnamon stick (for stirring)
  • Optional: edible glitter or luster dust

Instructions

  1. Make the cinnamon simple syrup: In a small saucepan, combine 1 cup sugar, 1 cup water, and 3 broken cinnamon sticks. Bring to a simmer over medium heat, stirring until sugar dissolves. Reduce heat to low and simmer for 8-10 minutes until slightly thickened. Remove from heat, stir in 1 tsp vanilla extract, and let cool completely. Strain out cinnamon sticks and store syrup in a jar in the fridge for up to two weeks.
  2. Chill your glass: Place a rocks glass in the freezer for at least 10 minutes.
  3. Prepare the garnish: Slice a thin round of green apple and make a small slit from the edge to the center so it can sit on the rim of the glass. Set aside.
  4. Mix the cocktail: In a cocktail shaker, combine 2 oz vodka, 3 oz apple cider, ½ oz fresh lemon juice, and ½ oz cinnamon simple syrup. Fill the shaker with ice cubes (about three-quarters full).
  5. Shake vigorously for 15-20 seconds until the shaker feels frosty.
  6. Strain into the chilled glass using a fine-mesh strainer to catch ice shards or cinnamon bits.
  7. Add the dry ice: Using tongs, carefully drop the small piece of dry ice into the cocktail. Do not drink until the dry ice has completely sublimated (3-5 minutes).
  8. Garnish and serve: Once the dry ice has dissipated, place the apple slice on the rim and add a cinnamon stick for stirring. Serve immediately.

Notes

Never touch dry ice with bare hands; use tongs. Wait for dry ice to fully sublimate before drinking. For a non-alcoholic version, omit vodka and add extra apple cider and ginger ale. The cinnamon simple syrup can be made up to two weeks ahead.
