A quick, easy, and comforting breakfast made with rolled oats, pure pumpkin puree, warming spices, and toasted pecans. Perfect for meal prep and ready in minutes of active prep time.

  • 1 cup (240g) Old-Fashioned Rolled Oats
  • 1 cup (240ml) Milk of Choice (e.g., oat, almond, dairy)
  • 1/2 cup (120g) 100% Pure Pumpkin Puree
  • 2 tablespoons (30ml) Maple Syrup
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ginger
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/4 cup (30g) Pecans, chopped and toasted
  • 1 tablespoon Chia Seeds (Optional)

Instructions

  1. Toast the chopped pecans in a dry skillet over medium heat for 3-4 minutes until fragrant and lightly browned. Remove from heat and let cool completely.
  2. In a medium mixing bowl, whisk together the milk, pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, and ginger until smooth and uniform.
  3. Add the rolled oats and chia seeds to the pumpkin mixture. Stir well to ensure all oats are coated and submerged in the liquid.
  4. Divide the mixture evenly among 4-6 mason jars or airtight containers. Top each with a generous amount of the toasted pecans.
  5. Seal the lids tightly and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  6. To serve, stir the oats. Add a splash of milk if the consistency is too thick. Enjoy cold or warm in the microwave for 1-2 minutes.

Notes

Avoid using instant oats as they become mushy. Steel-cut oats require longer soaking times (12-24 hours). Toasting the pecans significantly enhances flavor. The oats can be stored in the refrigerator for up to 5 days. Do not freeze as texture may change.
