  • ½ teaspoon pumpkin pie spice (optional)
  • 1 ½ cups heavy cream (cold, for topping)
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract (for topping)
  • Ground cinnamon (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan well; line bottom with parchment paper for easy removal.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Set aside.
  3. In a large bowl, beat egg yolks with ½ cup granulated sugar until thick and pale yellow (about 3-4 minutes). Add pumpkin puree, vanilla extract, and warm milk; mix until combined.
  4. Gradually add dry ingredients to pumpkin mixture, folding gently with a rubber spatula until just combined. Do not overmix.
  5. In a clean, dry bowl, whip egg whites on medium speed until foamy. Gradually add remaining ½ cup sugar, a tablespoon at a time, and continue whipping until stiff peaks form.
  6. Stir about one-third of the whipped egg whites into the pumpkin batter to lighten it. Gently fold in remaining egg whites using a figure-eight motion until no streaks remain.
  7. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Cool in pan on a wire rack for 15 minutes, then poke holes all over cake with a fork or skewer.
  8. In a large pitcher, whisk together evaporated milk, sweetened condensed milk, ½ cup heavy cream, 1 teaspoon vanilla extract, and pumpkin pie spice (if using).
  9. Slowly pour milk mixture evenly over the warm cake, allowing it to absorb. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  10. When ready to serve, pour cold 1 ½ cups heavy cream, powdered sugar, and ½ teaspoon vanilla extract into a chilled bowl. Whip on medium-high speed until soft peaks form.
  11. Spread whipped cream evenly over soaked cake. Dust generously with ground cinnamon. Slice and serve cold.
