  • 1 large yellow onion, roughly chopped
  • 4 cloves garlic, smashed
  • 12–15 fresh sage leaves, plus more for garnish
  • 2 tablespoons unsalted butter
  • 4 cups vegetable or chicken broth (low-sodium recommended)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • ¼ cup heavy cream or full-fat coconut milk (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Carefully cut each acorn squash in half from stem to tip. Scoop out seeds and stringy bits. Brush cut sides with olive oil and sprinkle with salt and pepper. Place cut-side down on the prepared baking sheet.
  3. Roast for 30-35 minutes until fork-tender and edges are caramelized. Let cool for 5 minutes, then scoop out flesh (about 3-4 cups).
  4. While squash roasts, melt butter in a large soup pot over medium heat. Add fresh sage leaves and cook for 1-2 minutes, stirring constantly, until fragrant and slightly darkened. Remove about 4 leaves for garnish.
  5. Add chopped onion to the pot and cook for 5-6 minutes until soft and translucent. Add smashed garlic and cook for 1 more minute.
  6. Add roasted squash flesh and broth to the pot. Stir and bring to a gentle simmer. Cook for 10 minutes.
  7. Remove from heat. Use an immersion blender to puree until smooth. (If using a regular blender, let cool 10 minutes, blend in batches, and hold lid down with a towel.)
  8. Stir in heavy cream or coconut milk if using. Season with salt and pepper to taste. Ladle into bowls, garnish with reserved crispy sage leaves, and serve hot.

Don’t skip roasting the squash—it’s key for deep flavor. Fresh sage is a must; dried won’t give the same brightness. Let soup cool before blending to avoid accidents. Season in layers for best results. Soup tastes even better the next day.
