A warm, gooey, and easy slow cooker cinnamon roll casserole that frees up your oven and lets you enjoy Christmas morning with your family. Prep it the night before for a stress-free holiday breakfast.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese icing
  • 6 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/3 cup raisins or dried cranberries

Instructions

  1. Grease the slow cooker insert with melted butter.
  2. Open both cans of cinnamon rolls and set the icing aside. Cut each cinnamon roll into 6 to 8 pieces (about 1 to 1.5 inches each).
  3. Spread half of the cut cinnamon roll pieces evenly in the bottom of the greased slow cooker. If using, sprinkle half of the pecans or dried fruit over this layer.
  4. In a large mixing bowl, whisk together eggs, heavy cream, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth and pale yellow.
  5. Slowly pour half of the custard over the first layer of cinnamon roll pieces. Let sit for 1 minute.
  6. Add the remaining cinnamon roll pieces on top, along with any remaining mix-ins. Pour the remaining custard over everything. Gently press down with a spatula to coat.
  7. Cover the slow cooker and let the mixture rest at room temperature for 15 to 20 minutes.
  8. Cook on low for 2.5 to 3 hours, until the center is set and no longer jiggly, and the edges are golden brown. A knife inserted into the center should come out clean or with a few moist crumbs.
  9. Turn off the slow cooker and let the casserole rest for 10 minutes.
  10. Microwave the reserved cream cheese icing tubs for 10 to 15 seconds until pourable. Drizzle generously over the top.
  11. Serve warm.

Notes

For overnight prep, assemble the casserole in the slow cooker insert, cover, and refrigerate overnight. In the morning, let it sit on the counter for 20 minutes, then cook on low for 3 to 3.5 hours. To make in the oven, assemble in a greased 9×13-inch dish and bake at 350°F for 35 to 45 minutes.
