  • 2 cans Great Northern beans, drained and rinsed
  • 1.5 cups frozen corn
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 4 cups low sodium chicken broth
  • 1 can (4 ounces) green chiles
  • 2 tablespoons fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • 1 cup shredded Monterey Jack cheese
  • Salt and black pepper to taste
  • 1 avocado, diced (optional, for serving)
  • Sour cream or Greek yogurt (for serving)

Instructions

  1. Prep the aromatics: Dice the onion, mince the garlic, and seed and mince the jalapeño.
  2. Layer everything in the slow cooker: Place the chicken breasts in the bottom. Add the onion, garlic, jalapeño, drained beans, frozen corn, and green chiles. Sprinkle cumin, oregano, chili powder, salt, and pepper over everything. Pour the chicken broth around the edges.
  3. Cook low and slow: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  4. Shred the chicken: When the chicken is tender, remove it to a cutting board and shred with two forks. Return to the slow cooker.
  5. Add finishing touches: Stir in the lime juice and half the shredded Monterey Jack cheese. Let sit for 5 minutes.
  6. Taste and adjust: Adjust salt, lime, or cumin as needed.
  7. Serve and garnish: Ladle into bowls and top with remaining cheese, cilantro, avocado, and a dollop of sour cream or Greek yogurt.

Notes

For a thicker chili, mash some beans 30 minutes before serving. Bloom spices by sautéing aromatics first for extra depth. Always add dairy at the end to prevent curdling. Leftovers keep for up to 5 days in the fridge or 3 months in the freezer.
