  • 2 chai tea bags
  • 1/4 cup pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon pumpkin pie spice (or 1/4 tsp cinnamon, 1/8 tsp ginger, 1/8 tsp nutmeg, pinch of cloves)
  • 1/4 teaspoon vanilla extract
  • Pinch of black pepper
  • Pinch of salt
  • 1 cup milk of choice (whole milk, oat milk, or almond milk)
  • Optional: whipped cream, extra cinnamon, or a drizzle of maple syrup

Instructions

  1. In a small saucepan, bring 1 cup of water to a gentle boil. Remove from heat, add the 2 chai tea bags, and let them steep for 5 minutes. Remove the tea bags and gently squeeze them to extract flavor.
  2. Whisk in the 1/4 cup pumpkin puree, 2 tablespoons maple syrup, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, a pinch of black pepper, and a pinch of salt. Whisk until completely smooth, about 30 seconds.
  3. Place the saucepan back on the stove over medium-low heat. Bring the mixture to a gentle simmer (small bubbles around the edges) and let it simmer for 3-4 minutes, stirring occasionally.
  4. If desired, pour the mixture through a fine-mesh strainer into a mason jar or glass bottle to remove any pumpkin bits. Let cool to room temperature (about 15-20 minutes), then seal and refrigerate for up to 1 week.
  5. To make a latte, heat 1 cup of milk until steaming. Pour 1/4 cup of the concentrate into a mug, add the hot milk, and stir. Adjust sweetness or strength to taste. Top with whipped cream and a sprinkle of cinnamon if desired.

Notes

Don’t boil the concentrate after adding pumpkin; a gentle simmer is best. Whisk thoroughly to avoid pumpkin flecks. The flavors deepen after a day or two in the fridge. For an iced latte, skip heating the milk and pour concentrate over ice with cold milk.
