  • ¾ cup (90g) all-purpose flour
  • 1 teaspoon (5g) baking powder
  • ¼ teaspoon (1g) baking soda
  • ½ teaspoon (3g) fine sea salt
  • 1 teaspoon (2g) pumpkin pie spice
  • ¼ cup (40g) dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a 4-cup or 6-cup muffin tin with paper liners or grease lightly.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, sea salt, and pumpkin pie spice until no clumps remain.
  3. In a separate large bowl, whisk the pumpkin puree, vegetable oil, maple syrup, egg, and vanilla extract until smooth and uniform.
  4. Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula until the flour just disappears; do not overmix.
  5. Fold in the dark chocolate chips gently.
  6. Scoop the batter into the prepared muffin cups, filling them about ¾ full.
  7. Bake for 15-20 minutes for mini muffins or 18-22 minutes for standard muffins, until a toothpick inserted into the center comes out clean.
  8. Let the muffins sit in the tin for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Measure flour using the spoon-and-level method to avoid dense muffins. Do not overmix the batter. For mini muffins, bake for 15-20 minutes; for standard muffins, bake for 18-22 minutes.
